Saturday Blog Showcase #2
Its Saturday Blog Showcase once again, Lori from All That Splatters is hosting this week. This week I made cornmeal currant biscotti from Marzipan Mom. I found them on a break at work one day as I was having a cup of tea. They seemed to be what was missing from my tea time. I made sure to send myself an email reminding me where I found them so I could try them out for today.
With so much cornmeal the dough was pretty dry, but not too dry that it didn’t stick together. I think it’s due in part to the cornmeal I used not being ground as fine as some brands out there. It also gives the biscotti a good crunch even after dipped into tea. I’ll be making these again, probably for some afternoon tea time at work.
Cornmeal Currant Biscotti
(from Marzipan Mom adapted from Baking with Julia, recipe from Nick Malgieri)
1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
4 ounces (1 stick) cold unsalted butter, cut into 6-8 pieces
1 cup currants
1 large egg
1 large egg yolk (reserve the egg white)
1 teaspoon grated lemon zest
1 teaspoon pure vanilla extract

The cat was very interested in the biscotti as well. In fact he jumped on the counter and munched down a few currants.

OOOH Dana, Cornbread is a favourite of mine, so I know I would love cornmeal Biscotti.
